Raw honey means that the honey has not been heated to degrade enzymes and beneficial biochemicals (above 118°F) or been subjected to ultra-filtration. Raw honey will solidify in cool temperatures. Pasteurized honey remains fluid even when stored in refrigerator. For this reason you may receive honey that is solidified which often happens in winter months. A very slow low heat water bath can cause it to reliquify without destroying the beneficial properties found in raw honey.
